Preparing clean, healthy meals doesn’t need to be a chore. Crunchy, cooked veggies can be made in your microwave in just minutes.
I use a Pyrex loaf pan, whether making a portion for myself or a side dish for six.
This method works well for green beans, broccoli, asparagus and sliced zucchini.
Add just enough water so that your veggies are mostly submerged.
Cooking times vary by microwave, but 4 minutes is a good starting place. I prefer my veggies al dente. You can test doneness with a fork, as you would a potato.
When cooked to your liking, carefully lift the glass dish and drain into the sink. You may use a colander, I usually just pour the water out slowly without losing any veggies.
Now, if you like them plain- they’re done. You could top with sea salt and cracked pepper, or you could add a spoonful of bacon grease and gently stir to coat, then top with bacon crumbles- totally your call, but deliciously Paleo!
